Had no idea you could use quinoa in so many meals. Up until now I had only used it for breakfast.

I have had some great quinoa dishes in restaurants in Peru and Canada, and this answered some questions I had about volume. I've seen some cookbooks state quinoa cooks in 10 minutes; these recipes require 20 or more, depending on the type of quinoa and the type of liquid used. The recipes didn't turn my crank, but I have found it is great in vegetable soup (I add leftover cooked quinoa before serving) or mixed with leftover spaghetti sauce.
